COOKIE BAKING HINT:

For cookie baking --
lower oven to 300 degrees
for a SOFTER cookie.
~~Use silver pans.
Bake 22 to 24 minutes.
Refrigerate dough for
firm cookies.

EASY TO DO

Ingredients

PEEL AND CORE APPLES
SLICE THIN AND PUT THEM ON COOKIE SHEET
LIGHTLY DUST THEM WITH POWDERED SUGAR
PUT IN PRE-HEATED OVEN OF 250 DEGREES
BAKE FOR ONE HOUR and 15 MINUTES
Notes
EASY WAY TO DRY APPLES.
STORE IN CLOSED GLASS OR METAL CONTAINER, SOMETHING THAT WON'T HOLD MOISTURE.



CHOCOLATE CHIP YUMMIES
My husband and I make this together.
We really enjoy the delicious taste and soft cookie.

Ingredients

l and 3/4 cup oil
4 cups brown sugar
4 beaten eggs
2 tsp. baking powder
2 tsp. baking soda dissolved in 1/2 cup hot water
l tsp. vanilla
l tsp. salt
3 small pkg. chocolate chips
8 cups flour
Directions

Mix oil and sugar well.
Add beaten eggs, vanilla and soda mixture.
Add sifted dry ingredients and choc. chips.
Add more flour if needed for stiff dough.
Put in frid. for awhile to cool, or overnight.
Make a ball walnut size----no need to flatten.
Bake in pre-heated 350 degree oven 12 minutes or until golden brown.

This is a nice soft cookie.
It is very tasty.
Easy to make.
Freezes well.

CRANBERRY SALAD
We like to make this for holidays. My husband requests this.
It makes a nice pretty dish especially served in glass serving dish.

Ingredients

Whip l cup cream (can use cool whip)
ADD: 2 cups miniture marshmallows
Let stand for 2 hours
Grind 3 cups cranberries and add l cup sugar.
Let stand 2 hours
combine all and add
l can crushed pineapple
Mix
Let set overnight in frid.



CRANBERRY ORANGE BREAD
This is a colorful bread that is perfect for holidays and entertaining. My husband really likes this. I hope you all
enjoy this. It is very tasty. It is easy to make.
I like to make easy things now days.

Ingredients

2 cups flour
l and a half tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
l cup sugar
Mix this up good.
Add:
2 tablespoons soft shortening
1 egg beaten
grate rinds and juice of l orange plus fresh or diluted frozen orange juice to make 3/4 cup.
Mix.
Fold in l cup chopped raw cranberries.


Pour in greased 9x5x3" loaf pan.
Bake in 350 degree oven for 1 hour or until toothpick comes out clean


HAPPINESS CAKE
Keeps us in a "sunny disposition".

Ingredients

cream together
1/2 cup PATIENCE
1 cup LOVE
ADD; l tsp. SENSE-OF-HUMOR flavoring, blend well.
Put into the sieve of days, 2 cups of FAITH
2 tsp. of HOPE
l tsp. PLAIN GRIT
Sift together 3 times and add to the first mixture alternately with
l cup of KINDNESS.
Beat all together for 5 min. or until smooth and well blended.
Pour into the pan of TIME and bake in the oven of EXPERIENCE at EVEN TEMPERATURE of a SUNNY DISPOSITION until nicely browned.
Remove from pan when cool, add a frosting of SMILES and sprinkle all over with l cup of SONGS.


APPLE BREAD
This recipe is from my husband's sister Marilyn.
It is easy to make and oh so yummy. Thank you Marilyn.

Ingredients

l cup sugar
2 eggs, beaten
1 tsp. baking powder
l cup chopped peeled apple
2 cups flour
l tsp. vanilla
1/2 cup oil
l tsp. soda
3 Tblsp. sour milk
1/2 cup chopped walnuts (optional}
Directions

Mix.
Bake in 350 degree oven for 45 to 50 minutes.
Makes one large loaf or 2 small ones.


DELICIOUS FRUIT SALAD
This is easy and so good. Easy quick salad.

Ingredients

l - 21 oz. can peach or apricot pie filling
2 - cans (15 oz.) of drained fruit cocktail
l - 20 oz. drained pineapple crushed or tidbits, or chunks
1 - 15 oz. can drained mandarin oranges
2 medium bananas
Directions

In large bowl, combine all canned ingredients.
Cover and refrigerate.
Stir in bananas before serving.
YIELD about 12 servings

My daughter-in-law makes the best fruit dish. She cuts up fresh fruits and melons using whatever is in season. She will toss the
fruit together. It makes such a delicious fruit dish. Is healthy.
Very pretty in a glass bowl.


APPLE BUNDT CAKE
I like this since it is so easy to do. This recipe makes a full
bundt cake. This is so nice to make ahead of time as it stays
good and fresh. Keeps well.

Ingredients

3 beaten eggs
l cup vegetable oil
1 tblsp. vanilla
2 cups shredded peeled apples
2 cups sugar
3 cups flour
l tsp. baking soda
l teaspoon salt
1/2 teaspoon baking powder
Directions

Mix dry ingredients with the eggs, oil, vanilla.
Fold in the apples.
Pour into a greased and floured bundt pan.
Bake in 325 degree preheated oven.
Bake for l hour.
Cool
combine 2 Tblsp. each of pd sugar and brown sugar and sprinkle this on
top of cake.

MAY ADD SPICES AND OR CHOPPED WALNUTS

WITH SUGAR MIXTURE. or DRIZZLE FROSTING OVER TOP. Can serve with
whipped cream or ice cream.

EASY FUDGE FROSTING
Easy frosting you can make on top of stove,
or in microwave oven.

Ingredients

l cup sugar
1/4 cup shortening
1/4 cup milk

1/2 cup choc. chips
Directions

Put lst 3 ingr. in microwave bowl or sauce pan suitable for stove top.
Bring to a rolling boil
Take off heat and add 1/2 cup choc. chips
Beat until thick
Notes
Just make double batch for bigger cakes etc..
This is quick, easy, and adds so much to a cake.


BANANA BREAD (Choc. or Plain)
Easy recipe. Favorite of course by grand children
and friends. I make in food processor.

Ingredients

4 medium peeled ripe bananas
1/2 cup soft butter, or marg.
1 cup sugar
2 eggs
1 Tbls lemon or lime juice
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
Directions

In processor place bananas and process until mashed.
Add eggs and juice
Add butter and sugar
Add dry ingr.
Process until mixed.
Pour batter in greased baking dish.
Bake in preheated 350 degree oven.
One 9x5x3 inch loaf for 55 min,
2 and half inch muffins - 15 to 20 minutes. Makes 24 muffins
one 9x9 inch square for 40 minutes.

You may add nuts and spices.

You can mix in a bowl or with beaters if you do not have a processor.

I LIKE CHOCOLATE BANANA BREAD. SO DOES MOST EVERYONE WHO COMES.
Just add enough cocoa to taste.

PEANUT TREATS
A yummy treat esp. for holidays.

Ingredients

1 - 12 oz. pkg. butterscotch chips
1 cup creamy peanut butter
1 can chow mein noodles
1 can cocktail peanuts
Directions

Melt chips slowly
add peanut butter and mix until smooth.
Add peanuts and noodles.
Drop by teaspoon on cookie sheet
Put in frid. until set

So simple, and a tasty treat.
I buy the chow mein noodles in a sack and use what I feel is needed.
As long as the noodles get coated with the chips and peanut butter, that is all that matters.
ENJOY!!!!
I also use small peanuts that are plain with no skins on.


CHERRY JELLO SALAD
Our son likes cherry pie filling.
This is a wonderful easy jello salad
that is so easy to do and tastes so yummy.

Ingredients

1 large cherry jello (set to pkg. directions)
Whip with mixer.
Add l can cherry pie filling and
l carton cool whip
(oppt)miniture marshmallows
Directions

When jello is set
Whip with mixer
Fold in the pie filling
cool whip and
if wish the marshmallows

This keeps well in the frid. for few days


APPLE CIDER PANCAKES
My daughter was allergic to milk. We found this recipe which we all loved having and she could enjoy pancakes too.

Ingredients

1 and a half cups flour
l + 1/2 tsp. bk. pd.
1/4 tsp. salt
2 Tblsp. oil or melted margarine
1 and 1/4 cups unsweetened apple cider
l slightly beaten lg. egg
Directions

Mix together.
Let stand for 1/2 hour before baking.
Put on your griddle.
Serve and enjoy.
Unused batter stores well in frid..

268 calories
6 gr. protein
44 gr. carb.
8 gr. fat
69 mg. chol.
363 mg. sodium

DELICIOUS DROP BISCUITS
These are so easy to do. Just mix and drop on cookie sheet. Bake and enjoy!! Our family loves them.

Ingredients

2 cups flour
2 tablespoons baking powder
1 tsp. salt
2 eggs
3/4 cup heavy cream
Directions

Stir all ingredients together.
Bake in 400 degree pre-heated oven.
Bake for 15 minutes.
Makes 12

Delicious with the jelly recipe enclosed in my recipes.
Honey is good with them.


COTTAGE CHEESE PANCAKES
Truly a delicious pancake.
High protein.
DELICIOUS!!

Ingredients

1 cup flour
2 tsp. bk. pd.
3 Tblsp. sugar
1 c. cottage cheese
1 cup milk or half and half cream
1/4 tsp. salt
4 eggs
1/4 tsp. soda
3 Tblsp. oil
Directions

Mix all ingredients together.
Batter will be quite thin.
These pancakes are very light and fluffy.
(Notes)
There are no chunks of cottage cheese
in pancakes after they are made.
You don't even know there is cottage
cheese in there. ENJOY!!!!

CLARA'S - HASH BROWN - POTATO - HOTDISH -
GRAND-CHILDREN'S REQUEST!
Easy dish and so good.

Ingredients

l bag southern hash browns thawed
2 cups grated cheddar cheese
=================================
l can cream of chicken soup
l can cheddar cheese soup
l carton sour cream OR
l carton plain yogurt
onion, salt and pepper to taste.
Directions

Spread the hash browns in a buttered cake pan.
Mix together the remaining ingredients and spread over potatoes.
Cover with 2 cups grated cheddar cheese.
Bake in 350 degree oven for 45 minutes, or until done.
Notes
You can use any kinds of cream soups.
You also can just use cheddar cheese,
and not use as much grated cheese.
I like to use my 9x12 glass cake pan.

Sometimes I put in a can of french style green beans in with the hashbrowns. Can also put in diced ham.



YUMMY - CHOCOLATE - CAKE
This is a moist cake EVERYONE loves.
Youngsters, adults, EVERYONE!!
SUPER EASY TO DO.
Can be bars, cake, bundt cake, whatever.

Ingredients

2 cups sugar
3 cups flour
2 tsp. bk. soda
1/8 tsp. salt
6 tablespoons cocoa
3/4 cup salad oil
2 cups lukewarm water
2 Tablespoons white vinegar
2 teaspoons vanilla
Directions

Combine dry ingredients.
Mix liquids together.
Add to dry ingr.
Mix well.
Bake in pre-heated 350 degree oven.
Bake for 30 minutes, or until done.
(Notes)
You can use whatever style pan you wish.
If I want bars, I use large 16x11 pan.
For cake I use 9 by 12 pan.
Or a bundt cake pan, or layer pans, or have cup cakes.
Serve plain, frosted, and or ice cream or whipped topping.
This freezes well. Keeps at room temp. well for several days.


A P P L E - C A K E

This is a delicious apple cake that stays nice and moist.
This is one of our favorites and gets great raves from
everyone. Grace, a friend of mine, gave me the recipe.

Ingredients

4 cups diced apples
2 cups sugar
1/4 cup oil
l cup chopped nuts
2 eggs
2 tsp. vanilla
2 cups flour
2 tsp. soda
1 tsp. salt
Directions

Mix the lst 6 ingr. and let stand for 5 minutes.
Stir together the dry ingr.
Add to first mixture.

Pour into bundt pan. Bake in a 350 degree preheated oven,
for 50 to 60 minutes.
THIS IS A RATHER SMALL CAKE.
FOR A BIG CAKE TO FILL THE BUNDT PAN USE 1 AND 1/2 TIMES THE RECIPE.

YOU CAN DRIZZLE FROSTING ON TOP.
OR SERVE WITH WHIPPED TOPPING, OR ICECREAM,

ANOTHER T O P P I N G that is good is equal amounts of pd. sugar and brown sugar mixed together.
Sprinkle over top after cake has cooled.

Yummy Pumpkin Dessert

A favorite of our family

1 - 16 oz. can of pumpkin
l - 12 oz. can Evaporated Milk
3 - eggs
1 and 1/4 cup sugar
l Tablespoon ice cream
1/2 tsp. salt
2 tsp. vanilla

Mix together well. Pour in a 9x12 greased pan

Take l yellow cake mix (dry) -- sprinkle it evenly over the above filling.
Drizzle 3/4 cup milted margarine evenly over top of dry filling.

Bake in a 350 degree preheated oven for 50-60 minutes until golden brown.

Cool and serve with whipped topping or icecream.



Double Delicious Bars

(This is a big hit with everyone.)
1/2 cup melted margarine. Can melt in 13x9 inch pan right is 350 degree oven.
Take out of oven.
Add l and 1/2 cups graham cracker or vanilla wafer crumbs spread out in pan.
Pour one 14 oz. can sweetened condensed milk evenly over crumbs.
Top with 2 cups choc. chips and
l cup butterscotch chips over all.
Press chips down firmly with spatula.
Bake in a preheated 350 degree oven for 25 to 30 minutes until lightly brown.
If using a glass pan set oven at 325 degrees.


RHUBARB/BLUEBERRY JAM
YUMMY JAM REQUESTED ALWAYS BY GRAND CHILDREN

Ingredients

7 cups ruhubarb, cut up fine
4 cups sugar
l can blueberry pie filling (or any flavor)
l large package raspberry jello (or any flavor)

Directions

Mix rhubarb, sugar and pie filling well.
Let stand for 2 hours.
Then cook for 15 minutes.
Take off stove and add l large pkg. jello.
Stir until jello is dissolved.
Put into jars and seal.
Makes 4 and 1/2 pints.
You can freeze the jam in freezer containers too.
